Dress Up Dinner A Bit Tonight & Try Out This Delicious: Chicken Piccata

Here's everything you need for this succulent chicken dish. It requires just 5 minutes of prep time, so making it should be a cinch!

Ingredients To Gather:

  • 2-4 boneless, skinless chicken breast halves (1 1/2 pound total), or 4-8 chicken cutlets
  • 1/2 cup flour
  • 1/4 teaspoon salt
  • Pinch ground black pepper
  • 3 Tbsp grated Parmesan cheese
  • 4 Tbsp olive oil
  • 4 Tbsp butter
  • 1/2 cup chicken stock or dry white wine (such as a Sauvignon Blanc)
  • 2 Tbsp lemon juice
  • 1/4 cup brined capers
  • 2 Tbsp fresh chopped parsley

Directions To Follow: 

To make chicken cutlets, slice the chicken breast halves horizontally, butterflying them open. If the breast pieces you are working with are large, you may want to cut them each into two pieces. If the pieces are still thick after butterflying, put them between two pieces of plastic wrap and pound them with a meat hammer to 1/4-inch thickness.
Mix together the flour, salt, pepper, and grated Parmesan. Rinse the chicken pieces in water. Dredge them thoroughly in the flour mixture, until well coated.

Next, heat the olive oil and 2 tbsp. butter over medium-high heat in a large skillet and then add half of the chicken (if the pan is too packed, the chicken might not cook properly). Brown each piece on each side — this should take about 3 minutes for each side. Transfer the cooked chicken to a plate and repeat the above process with the remaining chicken. Transfer all of the cooked chicken to a rack and place it above a roasting pan. While you prepare the sauce, keep the chicken warm in the oven at 225 degrees Fahrenheit. To make the sauce, combine the chicken stock or white wine, lemon juice, and capers in a pan. Scrape up all of the parts that brown and then reduce the sauce by half. Then, add the rest of the butter and whisk everything together. Pour the sauce over the chicken.

And you're done! For a little flair, we recommend sprinkling parsley on top of the chicken for an attractive and tasty garnish. We like this chicken because it goes well with pretty much anything. Serve it with a couple of vegetable side dishes or mashed potatoes, or with pasta or rice. It's incredibly versatile!
