
Not a fan of flour tortillas? That is not a problem! Simply replace them with corn tortillas instead. Also, when it comes to the enchilada's make sure it is not too hot so that the sour cream will not separate into lumps.
I always use a lot of chilies to make them spicier but that is up to you.

Directions To Follow:
- Preheat oven to 350 degrees
- Combine shredded chicken and 1 cup of cheese
- Fill tortillas with the mixture and roll each one then place in a greased 9×13 pan
- Melt butter in a pan
- Stir flour into butter and whisk for 1 minute.
- Add broth and whisk together until it’s thick and bubbles
- Take off heat and add in sour cream and chilies.
- Pour mixture over enchiladas and add remaining cheese.
- Bake in oven for 20-23 minutes then broil
