I love how versatile meatballs can be. Once you decide meatballs are on the menu, there are so many different things you can do with them. For this recipe, I decided to use chicken because it's healthier than the beef and pork blend the family usually likes. You get to cut a few calories out my making this simple decision.
At my house we have what's called “Meatball Mondays” where we gather some friends, a bottle of wine, and we all sit around catching up about what happened over the weekend while making meatballs. Everyone gets to take some home, and the experience helps everyone look forward to Monday coming around, rather than dreading Mondays.
I make a huge batch of meatballs and then we sprinkle them throughout the meal planning for the week. One day we have spaghetti and meatballs, another day we will have meatball subs, one night we make pizzas and put the meatballs on the pizzas. The options are truly endless. But on Mondays, we enjoy the meatballs as appetizers and serve with a delicious firecracker sauce.
