
This amazing herb roasted chicken makes enough for four to six servings but if you are making it for a large family get together, you can double the ingredients to make more. The secret to cooking a chicken perfectly is to make sure you baste it enough and rotate it often if it is getting too dark on one side.

The Ingredients To Gather:
- 8 cups water
- ½ cup salt
- ¼ cup honey
- ¼ cup sugar
- 1 tablespoon peppercorns
- 3 thyme sprigs
- 2 bay leaves
- 2 garlic cloves
- 1 onion
- 1 lemon
- One 3-4-pound chicken
- 4 tablespoons butter
- 1 tablespoon salt
- 2 teaspoons thyme leaves
- 1 teaspoon pepper
- 1 teaspoon lemon zest
- 1 garlic clove
The Step By Step Directions To Follow:
1. Combine 2 cups of water with salt, honey, sugar, peppercorns, thyme, bay leaves, garlic, onion, lemon. Bring to boil ,cook 2 – 3 minutes. Remove from heat , add 6 cups water. Cool. Add chicken, submerging. Refrigerate overnight.
2. Preheat oven to 400°. Mix butter, salt, thyme, pepper, lemon zest, garlic.
3. Remove chicken from brine, pat dry. Transfer chicken to pan. Rub chicken with butter mixture, lifting skin off breasts to coat underneath.
4. Roast, basting every 15 minutes, 55 – 60 minutes. Let rest 10 minutes.
