For some of my friends, making spaghetti at home means grabbing a box of pasta and a jar of sauce from the grocery store. For me, I absolutely love making a rich hearty sauce from scratch. I love using this recipe and then modifying it slightly to mix it up, so it doesn't taste the same every time I make it. Sometimes I add heavy cream to make it a vodka sauce or I add sausage or meat to bulk it up for the boys.
No matter what I do to change up this recipe, every time I make it I am transported to Italy. After you make this meal for your family, you will know exactly how I feel. And if you have a pasta maker, I high suggest you make your pasta from scratch for the ultimate dining experience at home.

I have added red wine to spaghetti sauce and gravy for years…just kicks up the flavor a bit…is very good!

Certified San Marzano tomatoes are the only tomatoes for me.
If you simmer long enough, sugar is not needed to reduce acidity.
It depends you can use a couple tablespoons to a handful. Depends on if you want to taste the sweetness. I believe I use more than my mom did. Just play with it and taste.

Adding anchovies to the olive oil on medium low and letting them dissolve in the oil before adding anything else is the key to a good pasta sauce.

Years ago I had good friend who made spaghetti sauce, sloppy joes and chili like everyone else. When she was finished she added good size chunk Velvetta cheese and stirred it in. Approx 2″ chunk per qt. Taste was delicious and it thickened the consistency to point it was never ‘drippy or watery’.
I do it on occasion especially with sloppy joe mixture. Taste is good.

I always add wine. I also shred in fresh carrots to add sweetness and/or a little sugar. Never heard of adding chicken bouillion

First of all I never never buy jar sauce I can my tomatoes to make my sauce ,and always make it from scratch the Merlot is is a good touch . As for the amount the recipe makes you can make as little or as much as you want or just freeze in containers for a future time . Tastes just as good as fresh made if done right
