
When I make Greek food I don’t skimp on the servings. There is zero guilt involved when you’re cooking vegetable heavy dishes with just a little feta cheese for that added saltiness. My seven year old puts feta cheese on everything, rice, salad or on slices of chicken. We eat Greek at least once a week and now you can see why!
Easy Chicken Gyros
Ingredients

4 chicken breasts, pounded to ½ inch thickness
-
1 tablespoon mediterranean seasoning (you can substitute Italian seasoning in a pinch)

1 red pepper, thinly sliced
-
½ red onion, thinly sliced
-
4 pitas (this is a Greek-style flatbread you can find at almost any grocery store near the bread and tortillas or in the bakery)
-
optional: lettuce, feta cheese crumbles
Tzatziki Sauce
-
½ English cucumber, peeled and diced
-
2 cups cold plain Greek yogurt
-
4 teaspoons minced garlic
-
⅓ cup chopped dill, fresh or frozen (may sub 2 tablespoons dried dill)
-
1½ Tbsp freshly squeezed lemon juice (juice of ½ medium lemon)
-
½ tsp salt, or to taste
-
⅛ tsp black pepper

Greek Chicken Kebabs
Ingredients

1 3/4 – 2 lbs bonless skinless chicken breasts, diced into 1 1/4-inch cubes

1/4 cup + 2 Tbsp olive oil, divided, plus more for grill

3 Tbsp fresh lemon juice

1 Tbsp red wine vinegar

3 cloves garlic, minced
-
2 tsp dried oregano
-
1/2 tsp dried basil

1/2 tsp dried thyme

1/2 tsp ground coriander

2 large red bell peppers, diced into 1 1/4-inch pieces

3 small zucchini (nearly 1 lb), sliced into rounds slightly under 1/2-inch thick

Traditional Greek Pita Bread

1 cup hot water, but not boiling

2 teaspoons active dry or instant yeast

2 1/2 – 3 cups all-purpose flour

2 teaspoons salt

Baked Lamb with Olive Oil and Oregano

4 lamb chops, about 1 pound.

Greek Pasta Salad
For the Dressing:
- 1/3 cup olive oil
- 3 tablespoons fresh lemon juice
- 1 tablespoon minced shallots
- 2 teaspoons Dijon mustard
- 2 teaspoons honey
- sea salt and fresh cracked black pepper to taste
For the Pasta Salad:

5 cups cooked orzo pasta

2 cups de-seeded and coarsely chopped English Cucumbers

2 cups halved cherry tomatoes

1 heaping cup crumbled feta cheese

1/2 cup thinly sliced purple onion

1/3 cup chopped fresh basil

The list could go on and on! By adding lemon and olive oil you can give any dish a Greek twist.
Take a few of these and prepare together for a fun Mediterranean themed meal. I have Tzatziki Sauce in my fridge at all times. It’s wonderful as a topping on burgers or on salad or served as a dip with that amazing pita bread.
Greek can be a great, appetizer or main course, for dinner or lunch; it's fantastic healthy option anytime!
