
Sometimes we need to indulge without feeling too much guilt. When I get a sweet craving I will whip up these delicious chocolate chip cookies, which contain no meat or dairy. With only 8 ingredients and 8-10 minutes baking time, you can have a batch of tasty vegan cookies warm out of the oven in a half hour total. These cookies have been compared to non-vegan cookies and passed the test countless times! Try it for yourself.
Ingredients:
- 1 cup nonhydrogenated margarine, at room temperature
- 1 ¼ cup sugar
- 1 TBSP Molasses
- 2 teaspoons vanilla extract
- 2 ½ cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 ½ cup semisweet chocolate chips (Dark chocolate or vegan)
Directions:
- Preheat oven to 350F
- Start by creaming together the margarine and sugar until fluffy. Add the molasses and vanilla. Add the flour, baking soda and salt, and mix well. Fold in the chocolate chips.
- Drop by teaspoonfuls about 2 inches apart onto an ungreased cookie sheet and bake for 8-10 minutes. Until lightly browned. Let cool for 5 minutes before serving.
Hints:
You can substitute the flour with whole wheat or gluten-free flour, if you’d like to up the health factor on these. I also love to add walnuts to mine.
