Here's everything you need for this sweet, savory and downright decadent sweet and sour chicken. If you'd like a little more crunch to it, just add chow mein noodles for an even more Asian-inspired flavor.
Let's Get Started…
Ingredients To Gather:
- 1 box Chicken Helperâ„¢ sweet & sour chicken
- 2 cups water for rice
- 1 lb boneless skinless chicken breasts
- 3 tablespoons vegetable oil
- 1 small onion, cut into thin wedges
- 1/2 large green bell pepper, cut into 3/4-inch pieces
- 1/2 large red bell pepper, cut into 3/4-inch pieces
- 1 1/4 cups hot water for sauce
- 1 can (20 oz) pineapple chunks, drained
Directions To Follow:
- Start by pouring the rice from the Chicken Helper into a 2-quart saucepan and then adding 2 cups of water. Bring to a boil and then reduce heat and cover and simmer for about 20 minutes until the rice absorbs the liquid and is tender. Do not stir while you're simmering it.
- Next, cut the chicken into 1-inch pieces. You may need to pat the chicken dry. Put the chicken pieces into a medium-sized bowl, and then add the seasoning from the Chicken helper and toss to coat.
- Now, heat 1 tbsp. of oil over medium-high heat in a 10-inch nonstick skillet. Add the onions and bell peppers and cook for 3 minutes while stirring frequently. When the onions and peppers are done, remove from the skillet and then heat 2 tbsp. of oil in the same skillet. Add the chicken and cook for about 6 minutes or until it's a deep golden brown color on all sides. Stir occasionally while cooking. Next, add 1 1/4 cup hot water to the pan with the chicken and add the sauce mix from the Chicken Helper.
- Add the vegetables back to the skillet, bring to a boil and then reduce the heat. Simmer uncovered, stirring occasionally, for between 3 and 5 minutes until the chicken is no longer pink in the center and the sauce has thickened. Add the pineapple, stir to combine and then heat until the mixture is hot. Finish by serving the chicken over white rice.
Finished!
