Forget The Gravy: These Smothered Pork Chops With Roasted Peppers Are Our New Favorite

These smothered pork chops make enough for about four servings but you can always double the ingredients if you want left overs. They take about ten minutes to prepare and about twenty minutes to cook.

The Ingredients To Gather:

  • 1-1/2 cup Flour
  • 1 teaspoon Seasoned Salt
  • 1 teaspoon Lemon Pepper Seasoning
  • 1/2 teaspoon Cumin
  • 1/4 teaspoon Cayenne Pepper
  • Pinch Of Salt
  • Black Pepper To Taste
  • 8  Pork Chops
  • 1/4 cup Olive Oil
  • 7 Tablespoons Butter
  • 1 Onion
  • 1 Green Bell Pepper
  • 1  Yellow Bell Pepper
  • 1 Red Bell Pepper
  • 3 Tablespoons Flour
  • 2 cups Chicken Broth, More If Needed For Thinning
  • 2 Tablespoons Cream

The Step By Step Directions To Follow:

  1. Whisk   flour, seasoned salt, lemon pepper, cumin, cayenne pepper, salt,  pepper in  pie plate. Dredge  pork chops in flour mixture.
  2. Heat  oil,  4 tablespoons of  butter in  skillet over medium heat. Fry pork chops in batches until well browned, 2  minutes per side.
  3. Remove chops from skillet,  keep warm.
  4. Add onions,  peppers to same skillet, cook ,stirring occasionally, about 10 minutes. Remove  to  plate,  set  aside.
  5. To  same skillet, add  remaining 3 tablespoons butter,  3 tablespoons flour.
  6. Stir, cook until the roux turns dark golden, about 2 minutes.
  7. Whisk in  stock a bit at a time, working out all the lumps,  add  cream.
  8. Add more stock if the gravy is too thick.
  9. Taste, add more salt and pepper as needed.
  10. Add  onions,  peppers, coating them in sauce.
