
Here's everything you need for this incredibly rich and satisfying dish. This recipe calls for 2 tbsp. of hot sauce, but you can increase that if you prefer your food on the hot and spicy side.
Ingredients To Gather:
- 1 lb boneless chicken breasts, cubed (1″)
- 6-8 medium skin on red potatoes, cut in 1/2″ cubes
- 1/3 c olive oil
- 1 1/2 tsp salt
- 1 tsp black pepper
- 1 Tbsp paprika
- 2 Tbsp garlic powder
- 2 Tbsp hot sauce (more if you like it HOT)
The Topping To Tackle:
- 2 c fiesta blend cheese
- 1 c crumbled bacon
- 1 c diced green onion
Directions To Follow:

Start by preheating your oven to 400 degrees Fahrenheit, and then spraying a 9 x 13-inch baking dish with cooking spray.

Next, combine the olive oil, salt, pepper, paprika, garlic powder, and hot sauce in a large bowl.

Add the potatoes and chicken to the mixture and stir so that they're completely coated.

Then, place the potatoes and chicken into the baking dish and bake for between 55 and 60 minutes, stirring every 20 minutes.

You'll know they're done when they're crispy and browned, and cooked all the way through.

Meanwhile, fry the bacon while you're cooking the potatoes and chicken.

When the potatoes and chicken are done, take out of the oven and top with cheese, bacon and green onion.

Put it back in the oven and cook another 5 minutes or until the cheese melts.
