Pour the oil into an empty milk carton or an old, unrecyclable takeout container and toss it in the trash. (When the pan is cool, wipe it with a paper towel to remove any excess grease.) Put in an old container and freeze it then toss it on trash day.

Dig a hole in the garden and bury it…..
I use it to keep yard waste burning when I start a fire. I do not live in town. In the country and it is legal if you have a burn permit.
Make gravy with it like people have done for years. It’s tasty too.
