Homemade Garlic Mashed Potatoes Served With Tender Sirloin Tips

Ingredients To Gather:

The Ingredients For The Braised Sirloin:

  • 2 pounds of sirloin beef tips or sirloin steak cut into pieces.
  • 1 cup of all purpose flour
  • 1 tsp of salt
  • 1 tsp of fresh ground black pepper
  • 3 Tbls of extra virgin olive oil
  • 2 Tbls of butter
  • 1 yellow onion, chopped
  • 3 carrots, cut into chunks
  • 2 stalks of celery, cut into chunks
  • 3 cloves if garlic, chopped
  • 1 tsp of dried oregano
  • 1 tsp of dried thyme
  • 1 cup of beef broth
  • 1/2 cup of red wine
  • 1/2 cup of cranberry juice
  • 1 package of whole white button mushrooms
  • 1/4 cup of fresh Italian flat leaf parsley

What You Need For The Mashed Potatoes:

  • 8 white potatoes, peeled and cut into cubes
  • 5 tsp of butter
  • 3 garlic cloves, chopped
  • 1 bunch of long green onions, chopped
  • 1 cup of Mascarpone cheese
  • 1/2 cup of milk
  • 1/4 cup of grated Parmesan cheese
  • 1 tsp of salt
  • 1 tsp of fresh ground black pepper

Directions To Follow:

Start by making the braised sirloin. Combine the flour, salt and pepper in a medium bowl and then coat the beef in the flour mixture, shaking to get rid of excess. Brown the meat on all sides and then remove it from the pan. Next, add the onions, carrots, celery and garlic to the pan and saute for between 2 and 3 minutes. Put the meat back into the pot and then add oregano and thyme. To this, add broth, wine and cranberry juice and let it come to a boil. Next, turn the heat down, and the cover the mixture and simmer until the meat is tender. This generally takes between 1 hour to 1 1/2 hours. Take the meat out of the pan, and then use another saucepan to saute the mushrooms for 3 minutes. Strain the onion mixture and add it to the saucepan with the mushrooms. Heat and then cook until the sauce is reduced in half.

Now you'll make the garlic mashed potatoes. To do this, start by putting potatoes in a large saucepan and then covering with water. Boil and then reduce heat and cook about 15 minutes or until tender. Drain the water off of the potatoes and then then saute the garlic and onion in 2 tsp. of margarine, cooking until the onion is soft. Combine the onion and garlic with the rest of the butter, and the Mascarpone, milk, Parmesan, salt and pepper, and then blend well. Top the meat with the mashed potatoes and serve.

Sounds delicious, doesn't it? It's even better if you garnish it with a little parsley. This dish goes well with a side vegetable such as asparagus, but really any vegetable will work. As will a fresh and juicy dinner salad.
