This incredible soup makes enough for six servings but if you want plenty left over for another meal, you can always double the ingredients a piping hot bowl of Lasagna Soup is sure to have your mouth watering even before you get to taste it!

The Ingredients To Gather:

  • 8 cloves garlic
  • 1 tablespoon olive oil
  • ½ yellow onion,
  • 1 teaspoon oregano
  • ½ teaspoon crushed red pepper flakes
  • 2 tablespoons tomato paste
  • 1 can fire roasted diced tomatoes
  • 2 bay leaves
  • 6 cups chicken broth or vegetable broth
  • ½ teaspoon salt
  • 2 cans white beans
  • 8 ounces campanile pasta
  • 8 ounces ricotta cheese
  • ½ cup Parmesan cheese
  • a squeeze of lemon juice
  • fresh parsley
  • salt and pepper to taste
  • fresh basil leaves

The Step By Step Directions To Follow:

  1. Roast Garlic: Drizzle garlic with a tiny bit of olive oil, wrap with foil. Roast 30 minutes at 400 degrees.
  2. Soup: Heat olive oil over medium heat. Add onions,cook until softened, about 6 minutes. Add oregano, red pepper flakes, tomato paste, stir well to incorporate. Cook for 3 – 4 minutes.
  3. Add diced tomatoes, bay leaves, chicken broth, salt. Stir to combine. Bring to a boil, reduce heat, simmer for 30 minutes. Add white beans. Take a few scoops of the soup mixture at this point, puree in blender with the roasted garlic.
  4. Add uncooked pasta, simmer on low until pasta is just softened. Taste and adjust.
  5. Ricotta: Combine the ricotta, Parmesan, lemon juice, parsley, salt, and pepper.
