If You Have Some Leftover Potatoes From The Other Night You Can Make This Amazing Recipe In A Snap!

Cooking tip: These potato cakes are naturally soft. When frying, be sure to leave enough room between them to be able to flip carefully without breaking.

Ingredients To Gather

  • 2 tbsp olive oil

  • 1 small red onion, finely diced

  • 3 cloves minced garlic

  • 4 cups cold mashed potatoes

  • 1 beaten egg

  • 4 rounded tablespoons flour

  • ¼ cup chopped green onion

  • 2 tbsp chopped parsley

  • ½ tsp black pepper

  • 6 slices crisp cooked, thick cut smoked bacon, chopped

  • 1 cup diced cheddar cheese about a ½ inch dice or smaller

Step By Step Directions To Follow 

  1. In a small pan heat olive oil and add the red onion and garlic and sauté until the onions are softened but not browned.

  2. Turn off the flame. Add all of the remaining ingredients in a large bowl and mix together. Add flour if the mixture is too wet.

  3. Form into 12 balls, roll in flour and flatten into potato cakes about an inch thick. If sticking when rolling wet your hands to help.

  4. Heat a quarter inch of canola oil in a saute pan. Fry for a few minutes on either side until golden brown, drain on paper towels before serving.

Finished!

You've now made your very first batch of cheesy, onion, bacon potato cakes. You can serve with another kind of breakfast side to make a more complete breakfast or brunch. We recommend eggs or sausage or fruit. There's nothing like a great breakfast to start your day off right and that's just what these cakes will do.

    This is not a very good recipe, first of all get rid of those red onions and use sweet white onions. And mashed potatoes and you kidding me!!!!! Use shredded Idaho potatoes.

    POTATO PANCAKES..MMMMMM WE MAKE THEM WITH RAW POTATO’S GRATE THE POTATO AND THEN AN ONION….SOME FLOUR AND 1/2 TEASPOON SALT….MIX ALL TOGETHER UNTIL IT LOOKS LIKE A BATTER…MAY HAVE TO ADD FLOUR SLOWLY…. THEN PUT IN FRIDGE FOR ABOUT 1/2 HOUR OR SO UNTIL YOUR READY TO COOK THEM….PUT SOME EVO IN THE FRYING PAN, THEN SCOPE LIKE YOUR MAKING A PANCAKE….LET FRY UNTIL YOU SEE BUBBLES, THEN TURN OVER , CONTINUE UNTIL YOUR FINISHED….TO BE SERVED WITH SOUR CREAM …OMG SOOOOO GOOD….
