
The following recipe makes about twelve (12) Blueberry Blintzes. Try them once and you will want them again and again. Please check the following ingredients and preparation instructions:
Batter:
•1 cup milk
•1/4 cup cold water
•2 large eggs
•1 cup all-purpose flour
•1 pinch salt
•1 tablespoon sugar
•3 tablespoons melted butter.Blueberry Filling:
•1/2 cup sugar
•1/4 teaspoon cinnamon
•1 teaspoon diced lemon zest (optional)
•1 1/4 pounds washed, stemmed blueberries1. Blender or food processor: combine milk, water, egg, flour, salt, sugar. Blend until lump free. Add melted butter. Blend another 5 minutes. Refrigerate batter for 1 hour.
2. Large saucepan: Combine sugar, cinnamon, lemon zest, blueberries. Toss. Place over medium heat. Allow mixture to come to a boil, reduce heat, simmer 2 minutes. Remove from heat.
3. Lightly coat 8-inch nonstick skillet with cooking spray. Place over medium heat. Pour 1/4 cup batter, swirl until bottom of pan completely coated. Pour off excess. Cook 30-45 seconds, flip. Cook additional 30 seconds. Remove to plate, cover with paper towel to prevent drying. Repeat.
4. Assemble: With slotted spoon place 1-2 tablespoons of berries (leave sauce for garnish) on lower third of pancake. Fold bottom up and away from you to cover filling. Fold the two sides in toward the center. Roll pancake away from you, ending with seam side down. Repeat with remaining pancakes and filling.
Be certain to heat the pan over a medium heat. You will then add butter and fry the blintzes on both sides until crisp. Once plated you can top with blueberries, sugar, honey or whatever suits your imagination and appetite!
