If You Like Grilled Chicken Then We Highly Suggest This Recipe; It’s Too Good To Pass Up!

Here's everything you need for this succulent grilled chicken. Don't let your grill get too hot, as this can cause the chicken to char but not cook completely.

Let's Get Started…

Ingredients To Gather:

  • 1 3½–4-lb. chicken, backbone removed
  • Kosher salt and freshly ground black pepper
  • 4 sprigs rosemary
  • 2 heads of garlic, halved crosswise
  • 2 bunches red scallions
  • 2 tablespoons olive oil, divided
  • 1 tablespoon onion or chive blossoms (optional)

Directions To Follow:

  1. Set your grill to medium and then use salt and pepper to season the chicken.
  2. Take the rosemary, garlic, and 1 bunch of the scallions and place on top of the grill in a single layer.
  3. Lay the chicken on top of all of these with the skin side up and then cover the grill and cook for between 35 and 40 minutes or until the chicken is almost cooked through.
  4. Take 1 tbsp. oil and brush it across the chicken, and then place the chicken onto the grill grates with the skin side down.
  5. Grill for between 10 and 15 minutes or until the skin turns crispy and the chicken is cooked all the way through.
  6. Place on a cutting board and let it sit for 10 minutes before cutting, and while you're waiting, toss the rest of the scallions with 1 tbsp. of oil on a rimmed baking sheet.
  7. Grill the scallions for about 5 minutes or until tender and lightly charred.

This grilled chicken sounds so good we may just make it tonight. In addition to cooking with the scallions, you can also serve some with the chicken for a little extra flavor. We really like this chicken with a fresh dinner salad for a meal that's satisfying but not too heavy.
