Things You Will Need:

1 3½–4-lb. chicken, backbone removed

Kosher salt and freshly ground black pepper

4 sprigs rosemary

2 heads of garlic, halved crosswise

2 bunches red scallions
-
2 tablespoons olive oil, divided
-
1 tablespoon onion or chive blossoms (optional)
How To Prepare:
- Prep your grill. Make sure it is at the perfect temperature before moving forward.
- Place your aromatics in a single layer over top of the grill. Then place your chicken, skin-side up, right on top of your herbs and deliciousness.
- Put a lid on your grill and cook for about forty minutes.
- Open up your grill and brush your chicken with olive oil before flipping to have your skin side down. Allow to continue cooking for another ten minutes or so.
- Take chicken off the grill and allow it to rest. This should take about ten minutes. Then cut into pieces.
- Grill scallions by layering on a baking sheet with some oil and placing sheet on the grill. Cook for about five minutes.
- Serve chicken with grilled scallion.

Note: Make sure you keep an eye on your temperature, because if you let the heat get too hot, you'll end up with scorched chicken and a raw middle. Nobody wants to eat chicken like that! Also, having a thermometer handy will help you avoid the mistake of taking it off the grill too soon.
