While the chickpea has long been a relatively plentiful crop, there are certain aspects of its production that make it prone to extinction.

The problem lies mainly in changing environmental conditions and how they affect the growing conditions for this little but delicious legume. In fact, the region that has traditionally been one of its main producers is actually experiencing one of the worst droughts, making it difficult to grow anything!

    You can use cannellini beans and omit the Tahini also makes a great dip!
