
This Mexican style meatloaf uses taco seasonings, salsa, tortillas and Cheddar cheese to add lots of flavor to an otherwise boring meatloaf. It serves eight and it's very easy to assemble.
This recipe uses only a handful of ingredients. You may want to experiment using hot salsa instead of mild, or combining one pound beef and one pound of a different type of meat, like pork or turkey.

Ingredients To Gather:
- 2 pounds lean ground beef
- 1 (1.25 ounce) package taco seasoning mix
- 1 (16 ounce) can refried beans
- 4 (8 inch) flour tortillas
- 3/4 cup fresh salsa
- 1/2 cup shredded Cheddar cheese
Step By step Directions To Follow:
- Preheat oven to 350 degrees F .
- Mix the ground beef and taco seasoning.
- Place ground beef mixture on a large piece of foil. Press mixture into an approximately 1 inch thick square shape. Spread the refried beans over the beef. Place the flour tortillas on top of the refried beans. Layer tortillas with salsa and Cheddar cheese, keeping 1/2 to 1 inch away from the edges.
- Roll the beef mixture into a jelly roll shape, pressing and compacting the roll as you go. Pinch and seal the edges.
- Bake for 40 to 45 minutes.
Finished!
