If You Like Potatoes Bacon & Cheese This Side Dish Is Always A Winner No Matter What!

This Is A Great Side-Dish For Burgers, Roast, Pork Or Chicken. It's Delicious, Easy To Make, Gets Ready In Under An Hour, & Your Kids Will Love It! This Recipe Is Definitely A Winner!

Ingredients To Gather:

  • 3½ lb. large Yukon Gold potatoes

  • ½ lb. carrots

  • 6 slice smoked bacon

  • 1 tbsp. canola oil

  • 1 large sweet onion

  • 2 tsp. fresh thyme leaves

  • ½ c. buttermilk

  • 2 tbsp. unsalted butter

  • 2½ tsp. kosher salt

Directions To Follow:

  1. Cover potatoes and carrots with 2 inches of cold water in a large sauce pan. Bring to a boil over high heat. Reduce heat. Simmer for about 20 minutes or until potatoes are tender.
  2. Cook bacon in a large skillet over medium heat until crisp. Drain bacon over paper towels. Discard all but 2 tablespoons of the bacon drippings from the skillet. Add oil and onion to the bacon drippings. Sauté 10 minutes until onions are lightly browned and softened. Stir in thyme. Cook 2 minutes.
  3. Drain fork-tender potatoes in a colander. Put mixture in large bowl. Add buttermilk, butter, and salt. Mash with until smooth, with only small flecks of carrot showing. Stir in fried onions. Crumble bacon over mixture.

Finished!

This recipe is ready in less than an hour and it's a breeze to assemble. Kids love it, and so do adults. Perfect as a side-dish for roasts or to bring to a picnic, and for all kinds of weather.
