If You Love The Sloppy Joe Sandwich, Then You Will Be Obsessed With This Casserole

The next time you want to treat your kids to some special that you'll know they will fall in love with, make this sloppy joe casserole for them. The recipe is so easy to make, they could probably get their hands a little dirty and help out in the kitchen.

Things You Will Need:

  • 1 1/2 lb ground beef-lean is fine or even ground turkey
  • 1 onion, chopped & divided( yellow works best)
  • 1 clove garlic, minced or can use about 1T garlic powder(I did both)
  • salt & pepper, to taste
  • 1 can sloppy Joe sauce
  • 1 can cream of mushroom soup
  • 1 can corn(drained)
  • 16 oz cheese, shredded & divided( I used colby jack)
  • 32 oz bag tater tots, frozen

How To Prepare:

  1. Grease pan and preheat oven to 350 degrees. Once your casserole is ready, place it in the over for about 45 minutes.
  2. Brown your meat with onion and drain grease. Use a paper towel to pick up any excess.
  3. Add corn, soup, and sloppy joe sauce and cook on high for about ten minutes.
  4. Line your casserole dish with tots, then sauce, then cheese. You can also mix in some fresh chopped onions for a variety in texture. Top the dish with remaining tots.

Note: If you're not a huge corn fan, you can always swap out for fresh mushrooms instead. The mushrooms aren't as popular with the kiddos, so I like to chop them up really, really small so they can't find them.

I read the recipe, nowhere does it call for present rolls, it says top with tater tots.

Thinking about using Southern Comfort for the sauce.
