Ingredients To Gather:
- 12 ounces spaghetti
- 4 tablespoons unsalted butter, at room temperature
- 1 tablespoon extra-virgin olive oil
- ⅔ cup grated Pecorino Romano cheese
- Salt, to taste
- Freshly ground black pepper (lots of it), to taste
Directions To Follow:
- Start by boiling salted water in a large pot. Then, add the spaghetti and cook for between 8 and 10 minutes, or until it's al dente. While you're cooking the pasta, take softened butter and mash it together with the olive oil and Pecorino cheese in a large bowl.
- Drain the pasta and set aside 1/2 cup of the cooking water from the pasta.
- Combine the spaghetti and the butter mixture, tossing well so that the pasta is coated.
- Add the pasta water you saved and add to this as needed so that a sauce that's thick and creamy.
- Finish by seasoning the pasta with plenty of black pepper.
