If You Really Want To Make Some Authentic Tex-Mex Then You Need To Make These Chicken Sliders

This recipe makes enough for about six servings but if you are making them for a party or get together, you can always double or even triple the ingredients. To make the relish all you need to do is combine all those tasty ingredients together. These only take four to five minutes on the grill which is good because you won't want to wait very long to enjoy that first juicy and flavorful bite!

Let's Get Started!

The Ingredients To Gather:

  • raw corn kernels cut from 3 large ears of sweet corn
  • half of a large red bell pepper
  • 1/4 c. hot-pepper jelly
  • 3 T. chopped cilantro
  • 1 large red bell pepper, cored and sliced into 1/4″ thick rings
  • 1 tsp. olive oil
  • 6 hamburger buns,
  • 6 Gold'n Plump® Chicken Patties, Tex Mex flavor
  • 1 avocado, sliced (or use your favorite guacamole)
  • 1 fresh jalapeño
  • kosher salt, to taste
  • black pepper, to taste

The Step By Step Directions To Follow:

  1. In a medium bowl, stir together the raw corn kernels, red bell pepper, and hot pepper jelly.
  2. Then stir in the cilantro. Taste, adding kosher salt and freshly ground black pepper as needed. Set aside.
  3. Heat grill to medium-high.
  4. In a bowl, drizzle olive oil over red bell pepper rings, tossing gently to coat. Place pepper rings on hot grill. Once the pepper rings have charred a bit, after a minute or two on the grill, flip them over to char the second side. Remove to a plate.
  5. If your grill is large enough, grill the buttered buns alongside the red pepper rings. If not, grill them next, with buttered sides on the grill grates. When the buns have charred to your liking, remove them to a plate.
  6. Now turn up the heat just a bit more, to high heat. Place the chicken burgers, directly from the freezer, onto cleaned and oiled grill grates. Grill for 4 to 5 minutes. Flip chicken burgers over and grill for another 4 to 5 minutes.
  7. Remove chicken burgers to a plate. If adding cheese slices, place the cheese on the burgers 1 to 2 minutes before removing them from the grill.
  8. Place a grilled chicken patty on top of a grilled bun bottom.
  9. Top with a ring or two of grilled red bell pepper, followed by a big spoonful of fresh hot-pepper corn relish.
  10. Add slices of fresh avocado, plus fresh jalapeño slices.
