Things You Will Need:
- 2 large eggs
- 1 cup dried Italian-style bread crumbs
- 3/4 cups freshly grated Parmesan
- 4 (1/2 to 3/4-inch thick) center-cut pork loin chops (each about 10 to 12 ounces)
- Salt and freshly ground black pepper
- 6 tablespoons olive oil
- Lemon wedges, for serving
How To Prepare:
- Set up your breading station; one pan eggs, one pan breadcrumbs, and one pan with grated cheese.
- Season your pork with salt and pepper. Then start your breading process. Coat chops with cheese, then dunk in eggs, and finish with breadcrumbs.
- Now it's time to fry those babies. Head up 3 tablespoons of oil in a skillet over medium heat. Place chops in skillet and cooked for about six minutes on each side, or until golden brown. The internal temp should reach about 150 degrees.

Note: Once your done frying your chops, let them rest on a plate lined with paper towels. This will absorb any extra grease that's still on your chops and make sure they don't get soggy sitting in grease.
