
This classic French recipe makes enough for four to six servings but if you need more for a dinner party or to enjoy again the next day, you can always double or triple the ingredients.

The Ingredients To Gather:
- 8 chicken pieces
- 2 tablespoons butter
- 2 tablespoons oil
- salt and pepper
- 8 ounces mushrooms
- 3 shallots,
- 1 tablespoon flour
- 1/4 cup cognac
- 1/2 cup white wine
- 1/2 cup chicken stock or bouillon
- 2 tablespoons tomato paste
- 1 tablespoon parsley
The Step By Step Directions To Follow:
- In Dutch oven, heat 1 tablespoon of butter with 1 tablespoon of oil. Brown chicken until golden on all sides.
- Sprinkle with salt, pepper, remove from pan.
- Drain off drippings, return to low heat, add other tablespoon of butter, tablespoon of oil. Add minced shallots, cook gently for three minutes. Add mushrooms, cook, stirring occasionally for 8 minutes.
- Sprinkle mushrooms with tablespoon of flour, cook for one minute stirring constantly.
- Pour on cognac, white wine, bouillon, stir in tomato paste. Add chicken, bring to simmer. Cover, simmer for 30 – 40 minutes.
