1 can (14.5 ounces) tomatoes

Step By Step Directions To Follow

Combine flour with salt and pepper; dredge chicken pieces in the mixture. Keep the excess flour.

Heat butter and oil in a skillet over medium-low heat; brown chicken pieces slowly, until golden brown. Remove chicken to a baking dish or covered pot.

In the same skillet, brown mushrooms and onions. Stir in leftover flour and add tomatoes and bay leaves.

Cook the tomato and mushroom mixture for about 4 minutes. Pour over chicken. Cover and bake at 350° for 40 minutes, or until chicken is tender.
Part of the reason this chicken is so tender is because it is baked with the tomato and mushroom mixture. You'll discover that truth after your first bite. However, if you made this chicken without it, bake only until the chicken is tender. If you bake it too long it may get dry. You can even try your own mixture to bake it with such as a sweet teriyaki mixture. Doesn't that sound delicious? Yum!
