It’s All About The Vanilla Bean Crust: This Berry Cobbler Has A Secret Ingredient Baked Inside That Makes It Irresistible

Here's everything you need for this sweet and juicy mixed summer fruit cobbler. What's great about this recipe is that you can use any type of fruit you want, so feel free to mix and match and experiment!

Ingredients To Gather:

  • 3 tablespoons butter,
  • 4 cups summer fruit Use whatever soft fruit you have!
  • 1/8 cup organic can sugar,
  • 1 cup organic all purpose flour
  • 1/2 cup sucanat,
  • 2 1/4 teaspoons baking powder.
  • 1/2 teaspoon real salt
  • 1 cup whole milk,
  • 1/2 of a vanilla bean, just the seeds, or 1 teaspoon vanilla extract,
  • 1/2 tablespoons demerara sugar

Instructions To Follow:

  1. Preheat oven to 350 degrees F (175 C). About 5 minutes before the oven is finished preheating, put the butter in a 1 1/2 quart casserole dish (I've used a glass pie dish and another odd-sized round pan I've had for years) and place in the oven to melt. Don't forget about it or it will burn!
  2. In a large bowl, toss the fruit with 1/8 cup of sugar. Set aside.
  3. In a medium bowl, whisk together the flour, sucanat, baking powder, and salt. Add the milk and vanilla.

Then, whisk until the entire mixture is moist. Then, take the batter and pour it over the butter you melted in the pan, followed by the berries. Spread the berries around so they cover the batter, and then cook until for between 45 and 60 minutes or until the cobbler is golden brown. After the cobbler has been baking for about 20 minutes, remove it from the oven and sprinkle the demerara sugar on top. Then place it back in the oven and continue cooking until it's done. Let cool slightly before serving.
