Loaded Baked Potato & Chicken Casserole

You can enjoy this dish with a side of ranch or just as it is. No matter how you make it this is absolutely delicious and a perfect meal any time of day!

* Hint * It gets better after being in the refrigerator overnight.

Your Shopping List

2 lbs chicken breasts, cut into 1/2-inch cubes
8 -10 potatoes, cut into 1/2-inch cubes
1/3 cup olive oil
1 tablespoon paprika
2 tablespoons garlic powder
6 tablespoons hot sauce

The Ingredients For The Topping

2 cups fiesta Mexican blend cheese
1 cup cooked bacon
1 diced green onion

Step By Step Instructions

1. Preheat oven to 500F

2. In a large bowl mix together the olive oil, hot sauce, garlic powder & paprika.

3. Add the potatoes and coat. Add to baking dish.

4. Roast the potatoes for 45-50 minutes.

5. Once the potatoes are fully cooked add chicken.

6. Lower the oven temperature to 400°F.

7. In a large bowl mix all the topping ingredients together.

8. Top the raw chicken with the topping.

9. Bake 15 minutes or until until the chicken is cooked through and the topping is melted.

This is a recipe that is hard to mess up.

The reason why you need to preheat the oven to 500F is because you want the potatoes to go in and instantly start to get crispy. The top of this casserole dish is going to have a crunch to it.

You can substitute the Mexican Cheese to any other type that you want. I use that type because I found it to have a sharper taste.
