
Here's everything you need for this indulgent dish. To make it even quicker, you can buy chicken strips already seasoned with Mexican or southwestern spices.
Ingredients To Gather:
- 12 ounces cooked chicken, cut into 1-inch cubes (about 3 cups)
- 1 cup sour cream (regular or low-fat)
- 1 cup shredded monterey jack cheese
- 1 cup shredded cheddar cheese
- 1⁄2 cup salsa (mild, medium or hot)
- 1 (4 ounce) canchopped green chilies
- 1 teaspoon ground chili powder
- 1⁄4 teaspoon cayenne pepper
- 8 flour tortillas, cut in half
Directions To Follow:
- Start by preheating your oven to 350 degrees Fahrenheit and then using cooking spray to coat a square baking pan. Then, mix the chicken, sour cream, 3/4 cup of the Monterey Jack cheese, 3/4 cup of the Cheddar, salsa, chiles, chili powder, and cayenne pepper together in a small bowl and set aside.
- Take half of the tortilla pieces and place them in the pan. The pieces should overlap slightly so that they cover the bottom of the pan.
- Take half of the chicken mixture and place it on top of the tortillas, using a spoon to make it smooth. Place the rest of the tortilla pieces on top, and then top with the rest of the chicken mixture.
- Cover with the rest of the Monterey Jack and cheddar cheese, and then cover with foil and bake for 30 minutes. Then, remove the foil and cook for another 30 minutes. The top should be golden and bubbly.
