Ingredients
1/2 cup slivered almonds
1 cup of butter, softened
1 teaspoon of vanilla extract
1 cup of confectioners sugar
2 1/2 cups of all-purpose flour
1/2 teaspoons of salt
Parchment Paper
an additional 1/2 cup confectioners sugar (this will be used with the confectioners sugar)
1. Begin by preheating the over to 350F.
2. Toast almonds in a single layer, within a shallow pan, for about 6 minutes. Stir almonds about 1/2 through to create an even toast. Almonds should become fragrant.
3. Let Cool completely (about 20 minutes). Reduce oven temperature to 325°.
4.Process almonds in a food processor 30 seconds or until finely ground.
5.Beat butter until creamy. Gradually add vanilla and 1 cup confectioners sugar, beating well. (Dough will be crumbly.)
6.Combine flour, salt, and almonds; gradually add to butter mixture, beating until blended.
7. Shape dough into 3/4-inch balls, and place 2 inches apart on parchment paper-lined baking sheets.
8.Bake at 325° for 12 to 15 minutes or until edges are lightly browned.
9. Cool on baking sheets 2 minutes. Transfer to wire racks, and cool 10 minutes.
10. Roll cookies in 1/2 cup confectioners sugar.
