Make Extra: This Cheesy, Garlic Loaded Mashed Potato Casserole Never-Ever Lasts Long In Our House!

We have to say that this recipe is a guaranteed hit every single time and is one for the books. You might like all that cheese and bacon; this is definitely comfort food for sure.

Let's Get Started…

The Ingredients To Gather:

  • 5 lb russet potatoes
  • 1/2 cup butter
  • 8 oz cream cheese, cubed
  • 1 cup sour cream
  • 2 cups cheddar cheese, divided
  • 2.8 oz jar real bacon pieces (or 10 slices bacon, cooked and crumbled)
  • 4 green onions, sliced thin
  • 2 teaspoons kosher salt

The Step By Step Directions To Follow:

  1. Peel and chop potatoes.
  2. Place into a large stockpot.
  3. Cover with water and bring to a boil over high heat.
  4. Once boiling, reduce heat to a simmer and cook for 20 minutes.
  5. Test a larger piece by piercing with a fork to make sure they're cooked through and tender.
  6. Remove pot from heat, drain potatoes and place back in pot.
  7. Preheat oven to 350 degrees.
  8. Smash potatoes with the back of a wooden spoon, it's ok if there are still chunks.
  9. Stir in butter and cubed cream cheese.
  10. Keep stirring until completely melted.
  11. Add in sour cream, 1 1/2 cups cheddar, 3 sliced green onions, salt, and bacon pieces.
  12. Spread into a greased 3 quart baking dish.
  13. Sprinkle remaining cheddar, bacon pieces, and sliced green onion over top.
  14. Bake at 350 for 15 minutes.
  15. Cheese is melted and potatoes are heated through.
