
Here's everything you need for this rich and hearty beef noodle casserole. You need just 10 minutes of prep time and 1 hour of cooking time for this recipe that makes eight servings.

Ingredients To Gather:
- 2 Tbsp olive oil
- 1 medium white onion, peeled and chopped, about 1 1/2 cups
- 1 bell pepper, seeded, ribs removed, finely chopped, about 1 cup
- 3 cloves garlic, minced, about 1 Tbsp
- 1 28-ounce can whole peeled or crushed tomatoes
- 1 1/2 pounds ground beef
- Salt
- 4 ounces mushrooms, sliced
- 12 ounces egg noodles
- 1 1/2 cups frozen corn, defrosted
- 1 15-ounce can of black olives, strained and chopped
- 8 ounces cheddar cheese, grated
Directions To Follow:
- Start by preheating the oven to 350 degrees Fahrenheit and then heating a large pot of water to cook the egg noodles in.
- Next, make the tomato sauce base by heating 1 tbsp. of oil over medium-high heat in a large pot or skillet that has a heavy bottom.
- Add the onion and bell pepper and saute for 4 minutes or until softened, and then add the garlic and cook for another minute.
- Add the tomatoes, breaking them up first if you're using whole tomatoes, and then bring the mixture to a simmer and cook for 10 minutes before reducing the heat to warm.
- Next, add 1 tbsp. of oil to another skillet and heat to medium-high, adding the ground beef in batches and breaking it up with your hands. Cook it for a minute or two until it browns on one side, and don't stir it while it's cooking.
- Sprinkle salt over the meat while cooking, and then turn the beef once it's browned on one side.
- When the meat is almost completely browned, remove it from the pan and combine it with the tomato and onion mixture.
- Now, saute the mushrooms in the same pan you used to brown the meat, using the leftover oil and beef drippings.
- Once the mushrooms are browned, add them to the tomato and beef mixture. While you're cooking the mushrooms, add the pasta to the pot of boiling water and cook about 4 or 5 minutes or until al dente.
- Then, add the ingredients you've already prepared, along with the corn, chopped olives and about two-thirds of the cheese, to the casserole dish and sprinkle the rest of the cheese on top. Bake uncovered for 30 minutes.
