
It might be hard to imagine that you could improve on the taste of Thanksgiving turkey. However, the rich cheese and sour cream in this recipe, along with the spicy chipotle chiles, will make you see turkey in a whole new light!
Ingredients To Gather:
- 3 tablespoons plus 1/2 cup vegetable oil
- 1 3/4 cups finely chopped onions
- 1 28-ounce can enchilada sauce
- 5 plum tomatoes, finely chopped
- 1 1/2 teaspoons finely chopped canned chipotle chilies
- 1 cup chopped fresh cilantro
- 3 cups coarsely shredded cooked turkey
- 2 cups grated Monterey Jack cheese
- 3/4 cup sour cream
- 12 5- to 6-inch corn tortillas
Directions To Follow:
Start by sauteeing the onion, and then adding the enchilada sauce, tomatoes and chipotles and simmering, while covered, for 20 minutes. Remove from heat and add the cilantro, salt and pepper. Then, combine turkey, sour cream, cream cheese, onion, cilantro and salt and pepper. Cook each tortilla in a skillet until soft and then set aside. Spread the sauce in a baking dish, add the turkey mixture to the tortillas, and place the sauce and cheese on top. Bake at 350 degrees Fahrenheit for about half an hour.
We like this recipe because it shows there are so many ways to prepare a holiday dinner. Even if you like the traditional turkey and dressing, thinking outside the box can offer an exciting new dining experience. Plus, if you're a fan of Mexican food, you'll feel like you're having dinner at your favorite authentic Mexican restaurant!

only in the united states do they use flour tortillas for enchiladas thats so disappointing since the tortilla and the way its prepared is the heart of the enchilada and they are made with corn tortillas lightly fried in oil never flour tortillas
