Ingredients To Gather:

2 racks baby back ribs (about 4 to 6 ribs per person)

Grey salt

Freshly ground black pepper

Espresso Sauce, recipe follows
Espresso Barbecue Sauce:

4 tablespoons mashed and minced garlic
-
4 tablespoons extra-virgin olive oil
-
1 cup cider vinegar
-
1/2 cup soy sauce
-
2 cups ketchup
-
2 cups honey
-
Grey salt
-
2 demitasse cups espresso (or about 1/2 cup of strong coffee or instant espresso)
Step By Step Directions To Follow:

Preheat oven to 325 degrees F.
3. Salt and pepper both sides of the ribs and massage spices into the meat. Put more season than you think necessary, because part of the rub will be lost. Line a cookie sheet with aluminum foil. Place the ribs on top of each other, about 3 layers high. Cook in the oven for 2 hours. Shift the bottom ribs to the top every half an hour until they are tender and almost falling off the bone.
4. 30 minutes before serving, take ribs of oven and place on a preheated grill. Brush ribs with Espresso Sauce and shut grill close. Turn and brush the ribs with sauce every 10 minutes for three more times.
The Espresso Barbecue Sauce:
- Mash garlic with the side of a knife. Mince finely to release oils.
- Add olive oil to a preheated saute pan. Add minced garlic. Saute until lightly browned, about 1 minute or so. Add next four ingredients. Stir well. Add a pinch of the grey salt. Whisk in coffee. Add the pepper. Bring heat to a simmer. Simmer for 10 minutes.
Finished!
This is a great BBQ sauce when you don't feel like having the same old BBQ sauce on your ribs. Serve with mashed potatoes or mac n' cheese.
