
Dress Up Your Noodles To Take Your Pasta To The Next Level
After trying this recipe I don't understand why I ever ate plain noodles in the first place. I mean, seriously, they just seem so boring after having enjoyed this recipe. I absolutely can't get enough of the aromatics of garlic and onion in this and the touch of truffle oil makes me feel like I'm dining at a four star restaurant. Moving forward, this is the standard for any recipe that involves pasta. You can eat it just like this, or add this step to any of your pasta recipes.
One day I was making spaghetti with meat sauce and I got to thinking about how many different ways my family loves to enjoy this meal. One prefers sauce on the side. One prefers LOTS of sauce. One doesn't like any sauce. For my one child that doesn't like sauce, it seems unfair to make them just eat noodles. That's when I thought to dress the pasta and serve the sauce separate.
This sauce is so good you just might want to eat it seperatly. Whenever I make this I am always pouring extra; the best part about this sauce is that it tastes even better the next day!

Anyone who thinks you put oil in the pot when cooking pasta never grew up with an Italian grandmother from Italy,you’d get the wooden spoon (noni’s lethal weapons) across the back of your head or butt. The oil immediately raises to top or the pot+does nothing to the pasta.Just a waste of good olive oil. For those who think it keeps the pasta from sticking,WRONG,that’s why a fair amount of salt is added.not only does it keep the pasta from sticking but also releases some of the semolina starch into the water which is why you always save a little of the pasta water to add to the sauce if needed to enrich the sauces flavor +texture. And also if you’re a pissano never put the sauce over the pasta, the drained pasta goes into the pan with the sauce and let simmer for a minute to let the pasta absorb the sauce flavor,another reason for salting the water in the beginning. Save the olive oil for a little drizzle over finished meal.Bonissimo.

According to Food Network it absolutely does work. I use olive oil in mine and yes it does flavor the pasta somewhat and keeps it from sticking together. Tune in to any of the chefs and watch them make pasta.
