One Bowl Irish Coffee Fudge Brownies

The best part of this brownie recipe for me is that it's all done in ONE bowl so the clean up is super simple! Here is what you will need to gather:

Ingredients

  • 1 stick (1/2 cup ) salted butter, melted
  • 3/4 cup granulated sugar
  • 1/4 cup Baileys Irish Cream
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 3/4 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1-2 tablespoons instant coffee granules
  • 1/2 cup semi-sweet chocolate chips (optional)

Instructions

1. Preheat the oven to 350 degrees F. Line an 8×8 inch baking dish with parchment paper.

2. In a medium bowl, mix together the butter, sugar, Baileys, vanilla and eggs until combined. Add the cocoa powder, flour, and coffee (I use 2 tablespoons) and stir until just combined. Stir in the chocolate chips, if using. Spread the batter evenly in the prepared pan. Transfer to the oven and bake for 20-25 minutes or until the brownies are just set. Let cool and then cut into bars.

3. If a chocolate drizzle is desired, melt together 1/2 cup semi-sweet chocolate chips and 1/4-1/2 cup Baileys until smooth and combined. Drizzle over brownies.
