
These wonderful pork chops make enough for four servings but you can always double or triple the ingredients if you want more to enjoy again for another meal.

The Ingredients To Gather:
- 2 pork chops
- 1/2 c. plus 1 tbsp. red wine vinegar
- 4 tbsp. extra-virgin olive oil
- 4 plums
- 1/2 red onion
- 1 tbsp. balsamic vinegar
- 2 tbsp. brown sugar
- kosher salt
- black pepper
- 1 tsp. dijon
- 6 c. baby arugula
- thyme leaves, for garnish
The Step By Step Directions To Follow:
- Arrange pork chops in baking dish, pour over cup red wine vinegar.
- Let marinate. Heat olive oil in skillet over medium-high heat.
- Add plums, onion, cook 5 minutes.
- Add balsamic vinegar, brown sugar, continue cooking 5 minutes more.
- Remove from heat, season with salt, pepper.
The Additional Step By Step Directions To Follow:
- Heat your grill or a grill pan if you prefer, over high heat.
- Take the pork chops out of the red wine vinegar, sprinkle with a bit of salt and pepper.
- Place the pork chops on the grill or grill pan for 4 minutes, flip them over and, grill them for four more minutes.
- Let them stand and rest for five minutes.
- Combine dijon and the rest of the red wine vinegar.
- Add the rest of the olive oil and then the arugula, making sure to toss it well so it gets coated.
- Sprinkle with some more salt and pepper.
- Then pour the plum sauce over the pork chops.
