
This recipe can feed up to four people but if you double it can serve eight to nine, depending on your serving sizes. This recipe will make a lot of sauce that can be poured over some rice or pasta if you choose to make that your side.
I used an extra large skillet to make the green beans since I added everything together for flavor.
Here Are The Directions You Need To Follow….
Instructions To Follow:
- Preheat your oven to 425°.
- Prepare the green beans first. In a large bowl, combine the green beans, 2 tbsp olive oil, and garlic and toss to evenly coat the green beans with the oil. Spread the green beans onto a foil-lined baking sheet in a single layer. Season with salt and pepper.
- Roast green beans for 10 minutes, remove from the oven and stir, then return to the oven for an additional 3-5 minutes. (If the garlic starts to burn, they're past done! Keep an eye on them!)
- Once the green beans are in the oven, heat 2 tbsp of olive oil in a skillet over medium-high heat. Add the mushrooms to the pan and season with salt and pepper.
- Cook for 5 minutes, stirring once. Once the mushrooms are browned, remove them from the skillet and set aside. Add another tablespooon of oil to the skillet. Add the chicken and cook until browned.
- Stir in the sauce, return the mushrooms to the skillet, and heat to a boil. Reduce heat to low. Cover and cook for 5 minutes or until the chicken is cooked through.
- Serve the parmesan chicken and mushrooms alongside the garlic roasted green beans.
