Pineapple Poke Cake With Pineapple Sauce & Cream Cheese Frosting

The Confectioner sugar is also known as powdered sugar, so be sure to have that available for the frosting as that's what makes it a creamy and soft texture. Be sure to use enough frosting for the cake so the pineapple doesn't show through.

Ingredients To Gather

For Cake:

  • 1 box yellow or butter cake mix

  • 1 (3-ounce) box vanilla pudding

  • 3 eggs

  • 1/2 cup oil

  • 1 cup milk

  • 1 small can crushed pineapple, drained

For Topping After Baking: 

  • 1 large can crushed pineapple, un-drained
  • 1 cups sugar

For The Frosting:

  • 1 (8-ounce) package cream cheese, softened

  • 1 stick butter or margarine, softened

  • 1 tsp Butter Flavoring

  • 3-3 1/2 cups confectioner sugar

  • 1/2 cup chopped pecans

Step By Step Directions To Follow

Prep:

Preheat oven to 350, set out butter and cream cheese to soften, and spray cake pan

Cake Instructions:

  1. Stir cake mix, pudding, eggs, oil, and milk until smooth
  2. Add drainedsmall can of crushed pineapple to cake mix and blend.
  3. Pour into prepared pan and Bake in preheated oven for 25-30 minutes.

Topping Instructions:

  1. While cake is cooling, boil pineapple and sugar on top of stove until sugar has melted.
  2. While cake is still hot, punch holes in cake with a fork and pour over hot pineapple sauce
  3. Cool Cake completely in the fridge

Frosting Instructions:

  1. Beat softened Cream Cheese & Butter until smooth, add Confectioners’ Sugar, butter flavoring, pecans, and mix well.

  2. Get the frosting dropped out all over the cake best you can before you start moving it around to smooth it out so the pineapple won't show through the frosting.

  3. Cover and Refrigerate
