I absolutely love whenever the opportunity to make something amazing out of leftovers. At times, leftovers can be my arch nemesis. They take up a ton of space in the fridge and I have to convince the rest of the family to eat them with me so we don't end up wasting food. When this happens, I try to reinvent the leftover. The pancakes are super easy to make and all you need is leftover mashed potatoes (or you can just make them fresh for this recipe, or you can buy store bought mashed potatoes), some parmesan cheese, egg, onions, and parsley.
