
We recommend topping these enchiladas with sliced jalapenos for a spicy touch. If you would like something more mild try adding diced tomatoes and onions. You can even go all out with some pico de gallo!

Ingredients To Gather:
- 1 cup prepared chili, canned or leftovers
- 2 ounces cream cheese
- 1/4 cup enchilada sauce
- 10 corn tortillas
- 2 cups grated cheddar cheese, divided
- jalapenos, for topping
Step By Step Directions To Follow

Preheat oven to 350. Pour the enchilada sauce into the bottom of an 8×8 baking dish.

Heat the chili and cream cheese together and stir until melted

Heat the tortillas on the stove or in the microwave until soft.

Place 1 1/2 cups of cheese down the center of each tortilla. Roll up and place seam side down in the baking dish.

Top with chili, remaining cheese, and jalapenos.

Bake for 20 minutes or until the cheese is melted.

Dinner was just made incredibly easy AND tasty. Everyone is going to love the added chili. Be sure to leave out some toppings like salsa, pico de gallo, guacamole, or sour cream.
