The Ingredients To Gather:
- 12 cups cold water
- 1 tablespoon whole black peppercorns
- 4 chicken leg quarters, skinned
- 3 celery stalks, sliced
- 2 medium carrots, peeled and sliced
- 2 bay leaves
- 1 large onion, peeled and cut into 8 wedges
- 4.5 ounces all-purpose flour (about 1 cup), divided
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup chilled butter, cut into small pieces
- 3 tablespoons buttermilk
- Remaining ingredients:
- Cooking spray
- 1 1/2 cups chopped onion
- 1 cup thinly sliced celery
- 3/4 cup (1/4-inch-thick) slices carrot
- 3/4 teaspoon salt
- 1 tablespoon all-purpose flour
- 2 tablespoons finely chopped fresh chives
The Step By Step Directions To Follow:
- Combine your first seven ingredients. In a large pot reduce the heat to medium-low and simmer for 1 ½ to 3 hours.
- Once that is done. Take the chicken out and remove the meat from the bones.
- Place the chicken broth in another pot and reduce it down to about six cups. This might take some time.
- For the dumplings combine the buttermilk, flour and baking soda. Mix this all together.
- Saute the chopped onion, celery and carrots for about five minutes. Then roll your dough into a little ball and drop it into the pan and let is cook for about ten minutes.
