This flavorful rosemary and balsamic pork loin is great on its own or mixed with some tender red potatoes. It takes about fifteen minutes to prepare and about an hour in the oven. It will smell so heavenly your mouth may be watering before you even take a bite!

The Ingredients To Gather:

  • 2 pounds boneless pork loin
  • 1/4-cup  Olive Oil
  • 3 tablespoons  Balsamic Vinegar of Modena
  • 10 garlic cloves
  • 1/2-cup  rosemary leaves
  • salt and  ground pepper, to taste
  • 2 pounds  red potatoes

The Step By Step Directions To Follow:

  1. Preheat oven to 450F.
  2. Combine olive oil, balsamic vinegar, garlic cloves, rosemary leaves, salt,  pepper.
  3. Spread 3/4 of the rub on all sides of the meat.
  4. Place in oven, cook for 15 minutes.
  5. Prepare  potatoes by combining them with the remaining  rub.
  6. Remove roasting pan from oven; reduce oven to 350F.
  7. Place  potatoes around  meat.
  8. Put back in the oven,  continue to cook for 50 minutes, or until done.
  9. Remove from oven,  let stand 10 minutes.
  10. Transfer roast to a cutting board; slice, serve with potatoes.
