The Ingredients To Gather:
- 2 pounds boneless pork loin
- 1/4-cup Olive Oil
- 3 tablespoons Balsamic Vinegar of Modena
- 10 garlic cloves
- 1/2-cup rosemary leaves
- salt and ground pepper, to taste
- 2 pounds red potatoes
The Step By Step Directions To Follow:
- Preheat oven to 450F.
- Combine olive oil, balsamic vinegar, garlic cloves, rosemary leaves, salt, pepper.
- Spread 3/4 of the rub on all sides of the meat.
- Place in oven, cook for 15 minutes.
- Prepare potatoes by combining them with the remaining rub.
- Remove roasting pan from oven; reduce oven to 350F.
- Place potatoes around meat.
- Put back in the oven, continue to cook for 50 minutes, or until done.
- Remove from oven, let stand 10 minutes.
- Transfer roast to a cutting board; slice, serve with potatoes.
