
When I saw the photo that went along with these tasty bars I was intrigued but you honestly don’t get the full picture until you smell them baking!
To Get Started You Are Going To Need…
Crust
¾ cup almonds
½ cup oats
½ cup pitted dates
¼ cup unsweetened coconut flakes
2 tablespoons honey
1 tablespoon sweetened condensed milk
1 teaspoon vanilla extractCream
½ cup coconut oil
2/3 cup unsweetened coconut flakes
2 cups greek yogurt (I used Fage)
2 tablespoons sweetened condensed milk
1 tablespoon lemon juice
1 teaspoon vanilla
2 tablespoons honey* Crust: Almonds and oats into food processor. Blend until finely chopped.
* Add rest of crust ingredients to food processor until sticky. If mixture isn’t clumping together you might need to add more dates.
* Transfer crust mixture to greased pan and press in to an even layer. Place in freezer.* Cream: Pour coconut oil and flakes into food processor. Blend several minutes.
* Once coconut mixture has become creamy add remaining ingredients. Blend until even mixed.
* Take crust out of freezer. Coat top with the cream. Optional: Sprinkle with additional coconut flakes or mini chocolate chips.
Yeah, I know. I talked on the first page bout how your dessert does not have to be chocolate, or have anything to do with chocolate, but I’m a little partial to those mini chocolate chips. So yes, I do see myself using them as a topping. But you don’t have to if you do not want to!
Oh, and FYI: The bars will freeze well up to a month — if they last that long!
