
Gather your supplies and get your kitchen utensils ready because it's time to start making some mouths water! The ingredients are simple and easy to find:
1 package of skinless, boneless chicken breasts
3 Tbsp canola oil
zest of 1 large lime
1 tsp cumin
2 Tbsp soy sauce
1 – 1 1/2 tsp kosher salt
3 Tbsp sugar
2 tsp curry powder
3/4 – 1 cup canned coconut milk
juice of 1 lime
optional – 1 serrano pepper, finely minced or cut into thin slivers
1/4 cup chopped fresh cilantro
Preparing the dish is simple. Add chicken breasts to a large ziplock bag and pound them until they are all the same thickness. In a separate bowl add all of your marinade ingredients and then pour contents into the ziplock bag with the chicken. Remove the air from the bag and let the chicken marinate for a couple hours. Cook until golden brown on each side (make sure the chicken is cooked through), then season with lime and Serrano pepper.
