
First off, in order to get to the bottom of this recipe, I had to figure out what makes the Mexican Pizza come together…
The Ingredients That You Will Need…
Medium Sized Flour Tortillas.
One Can of Re-fried Beans.
One Pound of Ground Beef. (The leaner the better).
Shredded Cheddar and Monterrey Jack Cheeses.
One Can of Enchilada Sauce.
Diced Tomatoes (one can, or one freshly diced tomato).
Vegetable or Canola Oil.
Chopped Green Onions.
The Directions That You Need To Follow
So now that we have all of our ingredients, it's time to transform your kitchen into a temporary Taco Bell! Grab that apron and lets get cooking!
Step One
Using a medium to large frying pan, heat cooking oil. Fry desired amount of flour tortillas (remember, you will two for each individual Mexican Pizza). Once your tortillas are fried, set aside.
Step Two
Preheat oven to 300 degrees.
Heat Refried beans in a medium sauce pan /pot. While beans are heating, cooked your ground hamburger meat in a separate pan until meat is cooked though. Drain excess oil. Heat your enchilada sauce in a different sauce pan.
Step Three
It's time to start building your pizzas! Starting with one tortilla, spread an even layer of beans across crispy tortilla. Once again, spread a new layer of ground beef. Drizzle enchilada sauce across the top and add a thin layer of cheese. Place second fried flour tortilla across the top. Drizzle more enchilada sauce across the top of second tortilla, cover in cheese, add diced tomato, and chopped green onions. Repeat process until your desired amount of Mexican Pizzas are prepped.
Step Four
Place Mexican Pizzas on baking sheet and bake at 300 Degrees until cheese is melted.
Serve Hot!
While it might seem like this recipe is a little bit time consuming, let me tell you, it is not! In fact, its super easy, and absolutely delicious. Not to mention, who doesn't love a hot tasty Mexican Pizza! This recipe has become a favorite around my house. As a matter of fact, my family would rather we had home made Mexican Pizzas instead of the fast food ones we used to eat weekly!
