- Temper chocolate with oil using a double boil method. This should take you about 3-4 minutes, so your arm will get tired as you continuously stir, so as not to burn the chocolate.
- Add brown sugar and regular sugar into chocolate with whisk. Add vanilla extract and eggs gradually. Keep stirring!! Feel the burn.
- Add flour an salt and split batter into the two pans with parchment paper.
- You should have some chocolate chips left over, sprinkles those along with the pecans over top of the batter in the two pans. Pop both of the pans into the oven and bake for around thirty minutes. Remove from the oven and allow them to completely cool down.
- Whip up some heavy cream and confectioners' sugar with your automatic mixer until it's light and fluffy.
- Layer brownie cakes with whip cream in between each layer, ending with whip cream on top.
Finished!
Note: You could even modify the recipe by using cupcake pans. Once the cupcakes are completely cool, you can slice them in half and do the layering step on a mini level.
