That Special Little Ingredient Your Potato Salad Has Been Missing

Here's everything you need for this luscious garden potato salad. This recipe makes 20 1/2 cup servings so there should be plenty for even the biggest, most demanding crowd.

Ingredients To Gather:

  • 3 lb. (about 6 large) potatoes
  • 1 cup chopped celery
  • 1/2 cup sliced green onion
  • 2 tablespoons chopped parsley
  • 1 cup low-fat cottage cheese
  • 3/4 cup skim milk
  • 3 tablespoons lemon juice
  • 2 tablespoons cider vinegar
  • 1/2 teaspoon celery seed
  • 1/2 teaspoon dill weed
  • 1/2 teaspoon dry mustard
  • 1/2 teaspoon white pepper

Directions To Follow:

First, boil the potatoes in their jackets and cut into 1/2-inch cubes. Then, combine the potatoes, green onion, celery and parsley in a bowl. Using a food processor or blender, blend the cottage cheese, milk, lemon juice, vinegar, celery seed, dill weed, dry mustard, and white pepper. Blend until smooth and then chill for 1 hour. Finally, pour the cottage cheese mixture over the vegetables and stir to make sure it's blended well, and then chill the entire mixture for a minimum of 30 minutes.

Wow! We can't wait to try this creamy garden potato salad again. In fact, we may host a backyard BBQ just so we have an excuse to make it — not like you really need an excuse to make something this yummy. Just make sure you keep out enough for yourself, because this salad is bound to go fast!
