The Best Damn Rhubarb Crumble Crepe You Will Ever Have In Your Life!

These delicious crepes make enough for thirty servings so there should be plenty for the whole family to enjoy. The secret to this recipe is the amazing Rhubarb filling and a flaky crumb topping that really make the crepes taste incredible.

Let's Get Started!

 

The Ingredients To Gather: 

  • 2 cup milk
  • 2 cup unbleached flour
  • 5 eggs
  • 2 tablespoon sugar
  • 1 teaspoon honey
  • 1 teaspoon vanilla
  • 1/2 cup butter
  • 1/4 teaspoon salt (optional)

How To Make The Filling

  • 5 lbs of 1 1/2 inch pieces of rhubarb
  • 2 cup sugar
  • 2 teaspoon vanilla
  • 2 teaspoon cinnamon
  • 1 teaspoon thyme or lemon thyme

For The Crumb Topping

  • 2 cup unbleached flour
  • 2 cup brown sugar
  • 2 tablespoon cinnamon
  • 8 oz  unsalted butter
  • 1 cup oatmeal

The Step By Step Directions To Follow:

  1. Mix eggs in blender till double in volume.
  2. Add in flour 1/4 cup at a time, blend.
  3. Add in milk 1/4 cup at a time until all is incorporated.
  4. Add in sugar, honey ,vanilla, blend.
  5. Add in melted butter, salt, blend
  6. Pour 2oz of batter into pan, cook until light brown, flip.

For The Rhubarb Filling

  • Mix all ingredients in pot with lid.
  • Cook over medium in pot with lid on, 15 minutes. Don’t stir or lift the lid.
  • Let filling cool with the lid off, transfer to containers.

For The Crumb Topping

  • Preheat oven to 350.
  • Mix flour, sugar, cinnamon, butter until well incorporated.
  • Add oatmeal, mix well.
  • Place on an un-greased sheet pan, bake 8-10 minutes.
  • Cool 2 minutes, break into pieces.
