The Best Fix-It-And-Forget-It Beef Stew Recipe We’ve Ever Tasted

Are you so sick that you can't just think straight, but know that you need to get dinner on the table for when every one gets home at the end of the day? Well, this recipe is just what you need to get the job done.

Things You Will Need:

  • 2 1/2 lbs. beef chuck, boneless, shoulder

  • 2 c. onion, chopped

  • 14.5 oz. tomatoes, with green peppers and onions, diced, undrained

  • 1 c. potatoes, frozen, hash brown O'Brien cubes

  • 1 c. carrots, diced

  • 1 c. beef broth

  • 1 T. garlic, minced

  • 4 oz. mushrooms

  • 1 tsp. thyme leaves, dried

  • 1/2 tsp. salt

  • 1/4 tsp. pepper

  • 2 c. slaw, broccoli

  • 1/2 c. peas, frozen

How To Prepare:

  1. Prep your beef for the crock pot by cutting it up into 12 equal pieces. Once you are done with that first step, go ahead and place it in the slow cooker.

  2. Then you are going to add the rest of your ingredients; salt and pepper, thyme, garlic, mushrooms, broth, tomatoes, onions and potatoes.

  3. Your going to put the lid on your crock pot and let it slowly cook for about nine hours on a low setting. When ready, the beef should be fork tender.

  4. Your final step is to turn off the crock pot and then stir in your frozen peas. Let the peas cook in the crock pot juices for about ten minutes.

Note: Serve inside a crusty sourdough bowl or with garlic toast. Feel free to go ahead and grate from cheese over top for an added touch of salt and creaminess.
